dc.description.abstractCoffee is a strategic sector for Guatemala; however, its production chain generates waste that is not adequately managed, including spent coffee grounds produced during the domestic and commercial preparation of coffee beverages. This study examined the recovery of chlorogenic acids (CA) from spent coffee grounds as a circular economy strategy. Laboratory-scale experiments were conducted using residues from V60 and Chemex filtration brewing methods, applying ultrasound-assisted solid–liquid extraction with water and hydroalcoholic mixtures (60:40, 70:30, 80:20). Chlorogenic acids were quantified using HPLC, and the cost per cup (beverage preparation + extraction) was estimated. The spent coffee grounds showed a slightly acidic and stable pH (V60: 6.16 ± 0.20; Chemex: 6.21 ± 0.06), high moisture content (V60: 67.13 ± 1.24%; Chemex: 67.97 ± 2.09%), and a unimodal particle size distribution between 0.45–0.65 mm. In addition, it was observed that the brewing method did not affect particle size fractions (F = 0.028; p = 0.867). Extraction yields in descending order were H₂O > 60:40 > 70:30 > 80:20, with water achieving the highest yield (5.18 ± 0.18 mg/g), surpassing 60:40 (4.30 ± 0.22 mg/g), 70:30 (2.47 ± 0.16 mg/g), and 80:20 (1.69 ± 0.31 mg/g), respectively. The extraction cost per cup was Q3.70 using water and Q4.42 using the 60:40 mixture, resulting in total costs of Q34.19 and Q42.18, respectively. It is concluded that the recovery of chlorogenic acids from spent coffee grounds is feasible and that the use of water with a 10-minute extraction time optimizes both yield and cost. It is recommended to evaluate alternative residues rich in bioactive compounds and to explore potential uses of the post-extraction solid residue, such as composting, adsorbents, or composite materials.eng
dc.description.abstractEl café es un sector estratégico para Guatemala, pero su cadena genera residuos, los cuales no tiene un tratamiento adecuado; entre ellos, los posos de café originados en la preparación doméstica y comercial de la bebida. Este trabajo estudió la recuperación de ácidos clorogénicos (AC) a partir de posos de café como vía de economía circular. Se trabajó a escala de laboratorio con residuos de los métodos de preparación por filtración, V60 y Chemex, aplicando extracción sólido-líquido asistida por ultrasonido con agua y mezclas hidroalcohólicas (60:40, 70:30, 80:20). Los AC se cuantificaron mediante HPLC y se estimó el costo por taza (preparación de bebida + extracción). Los posos presentaron pH levemente ácido y estable (V60: 6.16 ± 0.20; Chemex: 6.21 ± 0.06), humedad alta (V60: 67.13 ± 1.24 %; Chemex: 67.97 ± 2.09 %) y granulometría unimodal 0.45–0.65 mm. Además, se observó el método de preparación no afectó las fracciones granulométricas (F = 0.028; p = 0.867). Los rendimientos de extracción en orden descendente fueron H₂O > 60:40 > 70:30 > 80:20; con rendimientos de (5.18 ± 0.18 mg/g), superando a 60:40 (4.30 ± 0.22 mg/g), 70:30 (2.47 ± 0.16 mg/g) y 80:20 (1.69 ± 0.31 mg/g), respectivamente.
